Chicken Curry – A Culinary Journey through Indian Flavors


  • 500g chicken, cut into pieces
  • 2 large onions, finely chopped
  • 3 tomatoes, pureed
  • 1/4 cup cooking oil
  • 1 teaspoon cumin seeds
  • 1 cinnamon stick
  • 3-4 green cardamom pods
  • 1 bay leaf
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 tablespoon red chili powder (adjust to taste)
  • 1 tablespoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish


1. Marination:

  • In a bowl, marinate the chicken pieces with salt, turmeric powder, and half of the red chili powder. Let it sit for at least 30 minutes.

2. Sautéing Aromatics:

  • Heat oil in a pan, add cumin seeds, cinnamon stick, cardamom pods, and bay leaf. Sauté until the spices release their aroma.

3. Onion Magic:

  • Add finely chopped onions and sauté until they turn golden brown. This forms the flavorful base of the curry.

4. Ginger-Garlic Paste:

  • Adjust salt and spice levels according to taste. Garnish with fresh coriander leaves.
