Introduction:
Chhole Bhature, a quintessential North Indian dish, is a delightful combination of spicy chickpeas (chhole) and deep-fried bread (bhature). Ingredients:
For Chhole:
- 1 cup dried chickpeas (soaked overnight)
- 1 large onion (finely chopped)
- 2 tomatoes (pureed)

- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves (for garnish)
For Bhature:
- 2 cups all-purpose flour
- 1/2 cup yogurt
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 tablespoon semolina (sooji)
- Salt to taste
- Water (as needed)
- Oil (for frying)
Instructions:
1. Chhole Preparation:
- Cook soaked chickpeas in a pressure cooker until soft.
- In a separate pan, heat oil and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and green chilies, sauté for a minute.
- Add pureed tomatoes and cook until oil separates.
- Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Cook the masala well.
- Add cooked chickpeas and simmer until the curry thickens.
- Finish with garam masala and garnish with fresh coriander leaves.
2. Bhature Preparation:
- In a mixing bowl, combine all-purpose flour, yogurt, baking powder, baking soda, semolina, and salt.
- Knead the mixture into a soft and smooth dough. Add water if needed.
- Cover the dough and let it rest for at least 2 hours.
- Divide the dough into small balls and roll them into flat discs.
- Heat oil in a deep pan and fry the bhature until they puff up and turn golden brown.
